A tender egg bake filled with greens, herbs, and soft pockets of cheese for breakfast, brunch, or meal prep.

    Heat the oven to 375 F.

    Whisk eggs, milk, salt, and pepper until smooth.

  3. Step 3

    Soften spinach and scallions in olive oil in an oven-safe skillet.

  4. Step 4

    Pour in the eggs, scatter feta and herbs over the top, and cook for 3 minutes.

  5. Step 5

    Transfer to the oven and bake until just set in the center.

Recipe notes

Use goat cheese or shredded cheddar if that is what you have.

Storage tips

Keep slices refrigerated for up to 4 days. Serve cold or gently warmed.
