Heat the oven to 375 F.

Whisk eggs, milk, salt, and pepper until smooth.

Soften spinach and scallions in olive oil in an oven-safe skillet.

Pour in the eggs, scatter feta and herbs over the top, and cook for 3 minutes.

Transfer to the oven and bake until just set in the center.
Recipe notes
Use goat cheese or shredded cheddar if that is what you have.
